INGREDIENTS :
To make Dough:
* 2 cup All Purpose flour (plain flour or maida)
* 1/2 teaspoon salt
* 2 tablespoons oil
* 1/2 cup water more or less as needed
*1/2 teaspoon Baking soda

For filling :
* 1/2 cup urad dal (kali dal)
* 1 teaspoon fennel seeds powder (saunf)
* 1 teaspoon coriander seeds powder (dhania)
* 1 teaspoon red chilly powder
* 1/4 teaspoon ginger powder
* 1/2 teaspoon mango powder (amchoor)
* Pinch of asafetida (hing)
* 1/2 teaspoon salt (adjust to your taste)
* 1 tablespoon oil
* Oil to fry
* 1/2 cup urad dal (kali dal)
* 1 teaspoon fennel seeds powder (saunf)
* 1 teaspoon coriander seeds powder (dhania)
* 1 teaspoon red chilly powder
* 1/4 teaspoon ginger powder
* 1/2 teaspoon mango powder (amchoor)
* Pinch of asafetida (hing)
* 1/2 teaspoon salt (adjust to your taste)
* 1 tablespoon oil
* Oil to fry
HOW TO MAKE :
* Firstly, Mix the flour, salt, soda and oil and make dough with the help of water.
*Now cover the dough and let it sit for at least fifteen minutes.
* Take the dal and soak it for around 2-3 hours. After this wash the dal properly.
*Now make a thick paste of dal without adding water.
* Now put a pan on the flame and add 1 tablespoon oil in it.
*Now add all the spices and paste (of dal) in it and roast them properly,let the mixture cool
* Now divide the dough into 14 equal parts.
* Roll out into small puris so that they are thinner around the edges and thicker in the centre.
* Place one spoon of stuffing in the centre and bring the edges together to form a ball. Flatten slightly.
* Now heat sufficient oil in pan and fry the Kachodi till they turn light brown, now take them out.
* Now fry again those light brown kachori to make them crispy.
* Now serve them with either aloo sabzi or tamarind chutney.
